Happy last Friday of February!

Look at this forecast! I will even take rain! I like rain!

Tuesday was our best day. I finished teaching and then went outside and read. I had to put on shorts in the direct sun!

I had a fun outing with my French teacher friend Elizabeth this week. We went to the prettiest patio I discovered this year. You may remember I went with Beth in January.

We had fries with curry mayo and

whipped feta and lavash.

We also had their craft cocktails! I was so happy and I really felt some of the funk I have been feeling lift away with the sun and warm temperature.

I let my plants get some Vitamin D while I was out.

I also heard birds chirping and the sounds of kids playing basketball on the playground behind my house. What nice sounds of spring!

One of our empty nest meals was salmon and TikTok pasta from here!

This time I took an entire bulb of garlic and chopped off the end, drizzled in olive oil and roasted it for about 45 min. at 400. I used to do this all the time to spread on bread with goat cheese (my sis in law’s idea) but my cousin Julie said the addition of garlic would be good for the pasta and she was right!

I use the block of feta sparingly and only use about half. It can be overpowering in my opinion.

I got a much needed car wash and enjoyed my quiet time inside the carwash!

I felt like a garden gnome in my red clogs! It was chilly but I wanted to be on the patio!

I made a cocktail one day.

And, I ate tomato soup on the patio for my lunch one day.

My friend Kim recommended this and it is good!

I had a good week and I realized how much I need to be outside. I got some friend time, some outdoor time, some good food and cocktails this week, and had dinners and tv with Tom each night. My mom got her second dose of the vaccine!

  1. I love your week! You are a ray of sunshine!
    I’m also very satisfied with my life! We went from 25° to 52° in one week! So your post on spring clothes yesterday was perfect! But shorts…!? #envy – That won’t happen for a while! But I hope for coffee in the sun at the cabin this weekend!

    1. Thank you! You are too kind. I am behind in responding. I know – you can’t do shorts for a long time. But just some coffee in the sun sounds amazing. And, you have a cabin!

  2. It’s great that you got out this week -in more ways than one! Socializing is crucial and there’s nothing like fresh air and sunshine! I still chuckle when you are wearing shorts at 57 degrees and I’d be bundled up in a jacket and booties – hahahaha!! It has been in the high 80’s this week, I am really wishing it would be in the 60’s and 70’s instead, I’d still like to wear some sweaters!

  3. Drinking & dining on patios is one of my favorite things ever! How did you like the Tiktok pasta? I was thinking about making it this weekend. Except I don’t really like Feta but I saw someone on TT do it with Brie so I might substitute that instead. I hope you have a great weekend!

  4. I had not heard about the Tik Tok pasta until you mentioned and now it’s everywhere! I like rain too! I took my car to get washed as well and love a clean car. I’m so happy to hear that your mom has received her second vaccine. Both my parents are fully vaccinated as well which is a relief. All my mom friends love Kim Crawford wine. I’ve tried it because of them and enjoy it too. I usually drink it in the summer months. Have a great weekend!

    1. The stores were out of feta! The best feta I have found is the Boar’s head that I get at Paul’s Fruit Market. I love a clean car inside and out and need to do the inside badly! That’s great about your parents’ vaccines! I am new to Kim Crawford because it is more than I usually spend! Ha!

      1. Haha I’m the same about the KC wine 😂 I usually get inside and out cleaned and that’s what I did the other day. I love standing there watching the car go through 😂I will have to try the Tik Tok pasta

  6. Maybe try the pasta with reduced fat cream cheese! I saw someone do this and it looked yummy…cream cheese is like it’s own food group to me! Love it! I am glad your week is looking up. Weather in Texas is much warmer but very gloomy this week. I will take it over last weeks freeze any day. I hope your weekend is great! Love reading your posts!

  8. That Kim. She is a wealth of knowledge! LOL wine and pizza and vuori and Athleta. What else is needed! I am so glad you liked the wine. If I ever see it on sale at Target or Costco, I will message you. Its sooooo good in the summer! I had lunch out 2x this week. But my favorite was today at our country club with my sister, Tracy. We sat and ate and talked for 2 hours. It was 67 deg and glorious! We are playing golf there tomorrow and probably eat lunch before we golf. And we rented a theatre and are watching The Little Things on Sunday with a few friends and theatre popcorn! I cant wait! Have a great weekend!!

    1. She really is! I can get on board with the wine and pizza but I just don’t want to encourage more lounge wear into my life. Your lunch and the movie sound glorious and I am envious! I need some friend time!
