Welcome to your Saturday Quarantine recipe! I am trying to do this on the weekend because I know I struggle with what to cook!

Would you like a really good and really easy homemade mac and cheese recipe? This comes from my cousin by way of her family friend.

What you need:

2 cups creamette or macaroni noodles (I also used penne one time)

1/2 cup butter (one stick)

2 tablespoons flour

1 and 1/2 cups milk (I used skim and it was fine)

1 tsp. salt

1/4 tsp. pepper (I am pretty sure I added a bit more and I also added cajun seasoning because I literally add it to everything)

1 cup cheese (I could not believe how little the amount of cheese was – I used some sharp and some mozzarella)

Note: I made a half recipe below in an 8×8 but this calls for a 9×13.

Boil your noodles and drain. I like to undercook a bit because it will still go in the oven.

Melt butter over low heat.

Stir in flour and keep stirring until it reaches a smooth paste consistency.

Slowly pour in milk, stirring constantly.

Add salt and pepper and cook until thick.

Place drained noodles in the baking dish and top with prepared sauce. Top with cheese. I did stir because I was scared not to.

The recipe also says to top with tomato slices. That sounds really good, but I did not do that, either.

Bake at 350 for 20-25 minutes. This recipes comes together pretty quickly!

  1. Mac & cheese has always been my favorite meal! When I was a kid, for my birthday, my mom would always make homemade Mac & cheese for me. I have my grandma’s baking dish that says “Lulu’s Mac & cheese” ❤️

  2. Wow, that looks delicious! I buy a mix from Publix when I’m in the states, it’s really god! In Sweden it’s more common to do “stewed macaronis”, it’s the same except the cheese.
    Thank you for a Saturday post! I enjoyed this week’s posts, I’m glad to see that you do some shopping again! I bought a pair of beige dress pants at H & M yesterday, and yes, I bought in an actual store. Swedes are coming out into the world again, but the politicians are not happy… They are threatening to close down restaurants…

    1. Thank you! Homemade is so much better than the mix! You can add ham, lobster, or another protein and it’s on many restaurant menus.
      I miss going in stores! I am watching BBC news and they are talking about Sweden and other countries loosening restrictions slightly. Our dental offices are opening soon. Non essential medical are opening.
      When does your school year end? Did you see what Denmark did? They have outdoor tent classrooms!

The guy to the left is a famous provocateur and author… At first I thought that he had been an exchange student with your parents! Haha! No, I haven’t seen the tent schools in Denmark… I wonder if it’s really true…? My last day is June 16, same day as our plane tickets for Miami, sniff, sniff…

      2. No our exchange student was Hannah and she is maybe 25 now? I saw the tents on the news and kids were playing tag by tagging each others’ shadows! Haha!
        Did you cancel tickets yet? It might be a possibility. You can still go to grocery and essential items and beaches are opening.

      3. No, our tickets are non-refundable, but I actually think the flight will be cancelled, at least our tickets for London during Easter were cancelled. Do you really think your borders will be open? Our politicians strongly advice no traveling before June 15… but I suspect USA will still be closed for tourists, don’t you think?

      4. I guess so… But right now we are set on a summer in Sweden… If the weather is bad I will go into a deep depression…. :-D…. Give me the Florida sun! We started Outer Banks as a family yesterday, and it’s actually quite good! Summer feeling! They are in North Carolina, but it’s very similar to Florida!
