I’m not sure I could have taken a better photo! Ha!

I recently-ish discovered Chicken Salad Chick. Do you have one where you live?

I remember telling my SIL that I would never go to a chicken salad restaurant and that I don’t go that gaga for chicken salad period. Well, something changed. Part of it could be the delicious little cookie they give you! Ha!

I really had never tried my hand at making my own chicken salad. Tom loves Waldorf Chicken salad and I think it is the one with nuts and grapes? He likes it from Fresh Market but I never eat it. I hate nuts. I also think the big ol’ grapes can be awkward.

This is a very basic chicken salad but I don’t see why you couldn’t add stuff – maybe hard boiled egg or pickle. In fact, Chicken Salad Chick has all kinds of variations, by the way, but here is the Classic Carol copycat. I cooked my chicken tenderloins in a skillet and just used some of the juices rather than adding broth. Also, I used half plain non-fat Greek yogurt instead of all the mayo. I used the olive oil mayo, too. I love that they tell you to dice the celery super fine because I hate big pieces of raw celery in foods. Awkward!

You can have this on bread, toasted bread, in a lettuce leaf, or on crackers. I love the crackers they give you at CSC so I ordered store brand club crackers to try to replicate that.

I have never heard of chicken salad chick but while I do love a good homemade chicken salad I rarely get it when we go out anywhere since most places put onion in their chicken salad and I can’t stand raw onions. I’m with Tom; I like either halved grapes and pecans or chopped apples and walnuts in my chicken salad… basically some sort of fruity sweetness and the crunch of nuts.

  2. We have Chicken Salad Chick here and it’s popular. I have a yummy chicken salad recipe I make that has mayo, honey, pecans, poppy seeds, and grapes (but they’re halved). We usually make it for showers and parties.

    Chicken salad is not on our regular rotation around here, I prefer egg salad.

  3. Trav loves CSC & goes there for lunch sometimes. He knows that’s the only time he will see chicken salad as it’s a no for me, haha

  4. I love chicken salad, but am particular about mine. I like Chicken Salad Chick too. We don’t have one in our town, but in nearby towns there are a couple so I have it now and then. I make it a lot in the summer. Also, we have a grocery store here (Ingles) and their rotisserie chicken salad is so good! I buy that pretty often.

  6. This looks delicious! We have CSC and love it. The company was started in Auburn, AL. I like all kinds of variations of Chicken salad, but the key to a great texture is using a mixer to shred the chicken.

  7. I’ve heard about a lot of places to eat in the US but Chicken Salad Chick is new to me. I never think of making chicken salad but I think I might have to after seeing this recipe.

  8. There is one just down the road from us (Hoosier talk for about four or five miles away). It was built, but then it just sat there for over a year, I think. I haven’t made it in there yet. I didn’t know the chicken salad I make has a name. I’ll have to tell Mike that! I cut the grapes in half or quarters depending on how big they are. Now, I’m going to have to check out Chicken Salad Chick (is that a weird name or what).

  9. We do have Chicken Salad Chick here, but I usually get a salad or soup because I keep thinking about all the mayo they use. I make it from time to time in the summer and use nonfat greek yogurt. I also add chopped apples and grapes. It seems this is such a personal preference dish!

  10. I love chicken salad and we just got a Chicken Salad Chick nearby. I am a classic recipe girl so I need to check this one out. I usually cook the chicken in the crockpot and then shred it with my hand mixer. I do chop my celery very fine. Thanks for sharing!
