It’s finally Friday and I am happy to link up with Andrea and Erika!

I had a really relaxing weekend last weekend and I wanted to show you a favorite from my happy place – my backyard and my two patios. I normally have this chair folded on my upper patio, but I brought it out to the yard on Sunday and it was divine. Here is mine if you are looking for a gift for yourself or for Father’s Day.

The sun coming through the trees is another favorite from the weekend!

Andrea made popovers recently and shared and I remembered that I had been on a popover journey a few years ago. I already had the pan and I thought it would go well with my Monday night dinner. I used an easier recipe than Andrea’s – less ingredients.

I sometimes forget how good and easy wraps are. I had a lunch alone when Erica was out this week.

I’m still plugging along on this cute book. I really want to get more in this series but they aren’t at my library. Every summer I do give myself some summer gifts for making it through another school year – lol. Maybe this will be my treat?

My high school friend and the author of Host It Notes, Beth, came over to meet EO and brought him a margarita! He loved it!

We had some photogenic moments this week…

We have a school playground behind our house and that is where our dogs get to walk. Tom taught EO to go down the slide!

I was listening to Mid Life Matters podcast which I believe Tanya recommended and they talked about an easy scone recipe.

I had all the ingredients so I thought why not? I would like to try a savory version with cheese next time maybe?

425 for 8-10 minutes

Mix one cup self-rising flour with a bit less than one cup heavy cream. Make it a crumbly texture. Add in the chocolate chips. Make the dough into a circle and flatten (I didn’t even need a rolling pin) and then cut like a pizza with your pizza cutter but separate the 8 triangles so they can bake.

They aren’t super sweet but I will definitely make them again!

  1. We have two books by Julie Caplin in my library, but they are both translated and I prefer to read in English. They have the one you’re reading and one called The little bakery in Brooklyn!

    What’s a popover? I have a muffin pan, can you use that? The scones looked good, I will give the recipe to my baking daughter.

    Thank you for a nice post, I needed a break from work! (I work from home today, don’t worry.)

    Favorite this week? The weather was horrible, but still, I’m in the count down to summer and Florida! I love this time of year, when everything is in front of you!

  2. Those scones sound yummy and so nice and easy to make! It sounds like you have had a wonderful week. I don’t think I’ve made popovers since middle or high school. One of my best friends and I were on a real popovers kick and made them just about weekly; adding things like cheese and chives to them too.

  3. Your popovers and scones look delicious! I might try my hand at some kind of bread type treat this weekend. I have the ingredients right now as well, and I’m thinking I might try a cheesy jalapeno or cheese and olive combination. My favorite this week happened at work yesterday and I did not even mention it on today’s post: I wrapped up all of the huge event purchase orders, invoices, and finances that I spent on supplies yesterday at work. I worked with our accountant for this; I can’t tell you how relieved I am, and also that all of the money balanced! I was $0.27 over for last week for the weekly deposit; out of the $1 thousand something that I had in the registers, that is no big deal. !!!!! Happy Friday, my friend!

I think we are all craving a popover after seeing how good these look! I love that in between work and EO, you find time to read & even more, that you reward yourself after completing another school year! I walked on my treadmill twice this week and instead of watching something, I read on my tablet while listening to the book on audio from Spotify. This was a new favorite feeling like I was getting 2 things accomplished at once! Happy Mother’s Day and enjoy your weekend!

  5. I bought a Yorkshire Pudding tin this week and can’t wait to try it. A bit like a popover but rounder and flatter. They are yummy when you fill them with a ground beef and gravy mixture. Eddie Otis is just cuter than ever.

  6. Your backyard is gorgeous. I can see why it’s your happy place.
    Ahh! Popovers look similar to our Yorkshire Puddings. I love them on a roast dinner.
    It looks like EO is having great fun on the slide, what fun!
    Cheese scones are amazing, they never last long when I make a batch. Fruit scones are my favourite though.

  8. Oh, the eyes!!! He has the cutest little face ever! When I was a kid, we had a huge slide (school playground equipment…long story), and our American Eskimo Spitz would climb the ladder and slide down the other side. She was such a smart dog, but I think most dogs are. And, the ones who don’t seem smart are probably the smartest of all because they get out of doing things!
