It’s hard to believe it’s the last Wednesday of April but so it is. It’s a fun link up with Shay and Sheaffer today!

What We’re Eating…

I’ve had a fun semester with my kids! Jack took a chemistry of cooking class and we made a cake, bread, meat, and finally cookies. He had to take photos, record results, and have us taste them. For all of the cooking projects except one Mason and I helped and we had a really fun time doing it.

This past Sunday we got to eat these cookies!

On Sunday, I went ahead and made most of dinner early because I knew I had something to do late afternoon and I also made taco meat for the next night’s dinner. Honestly, this trick saves me in the summer, too. I know that my energy is greatest in the morning and I sometimes get a jump on it.

Mason and I made egg in the hole with sourdough bread for breakfast:

And, a highlight of our eating lately was these truffle dusted steak fries. OMG!

I am really trying to treat myself when I can. I recently had a nice lunch next to my hair place. I ordered a spinach salmon salad that was sooooo good!

And, here is what I did with the taco meat. I made like taco wraps or burritos with a side bagged southwestern salad. Tom proclaimed it “better than Taco Bell”.

What I’m Reminiscing About…

I don’t know. I haven’t let myself go too deeply into this yet, but of course school and summer is on my mind. I have mothered my twins from kindergarten until senior year of college and loved every minute of it. They are my life’s work and have made it so much fun and so rewarding. Oh no… here I go down that path. I am also going to be completing my 30th year of teaching high school Spanish. I have lots of emotions tied into that as well. The three of us have been on the school schedule together for so long! Sometimes I think Tom feels left out when we talk school stuff!

What I’m Loving…

Just loving having a dog again. We miss Ernie and Eddie Otis is definitely not a replacement for him. I’m slowing down and focusing on family, home, work, and puppy needs. We are spending a lot of time outside just enjoying nature. Just like babies, puppies force you to slow down and focus on the things that are important in that moment.

What We’ve Been up to…

Sunday we went to another church to hear Jack sing. We’ve been going to anything they invite us to go to, of course.

I have been joking that Tom gets EO when he is most docile. Tom is really happy.

What I’m dreading…

Even though we have very little school left, this time is hard. Kids are pulled out for so many tests and I have mixed classes of freshmen, sophomores, juniors, and seniors within the same classes. It’s hard to plan for these last weeks and end on a good note. I am working on that right now.

What I’m excited about…

I’m excited for all things summer, really. I hate being sticky hot, but I’m excited for shorts, flip flops, summer drinks, summer foods, more time outside, more unscheduled time, farmer’s markets, seeing friends, more time with my kids, and so much!

What I’m watching/reading…

Not much! My tv and reading time has decreased for now. I am still finishing a Cara Bastone book when I can sit outside with puppy asleep or being watched by someone else.

I have a couple of library holds to pick up but haven’t had time to do that, yet.

Trying to wear my Adidas a lot and just trying to wear what I have. I’m starting to cycle through my dresses and trying to wear all my fun patterned pants to school. When I’m home, my collection of rubber Birkenstocks are great for taking the puppy out in the wet grass. I have white ones and black ones and then some pink and blush ones from Target and Hobby Lobby. I am definitely set for pool and boat shoes for summer, but they are so fun to buy!

What I’m looking forward to next month…

I think we are doing one Derby activity, Mason moves home, school ends for college and then for me a few weeks later, taking Eddie Otis places, new flowers and plants for outside, and so much more!

  1. I can not wait for summer fun and summer sun! I often prep all our food in the morning too since that’s when my energy is highest as well. Do you boys know what they want to do after college?

      1. We’ve warned our boys that we’ll only pay for a bachelor’s degree too; any higher and they’re on their own.

    The end of the school year is always such a busy one. So glad you have cute little EO to focus on. He’s a great distraction from the craziness of the world I’m sure! And I bet you’ll be getting out on your boat again soon – yay!!!

  3. I loved reading about all of your good things! Why have I never food prepped in the morning before??? I’m going to start doing this for all meals, and not just the crock pot variety. But I do feel like I use my crock pot to do a lot of meat on days that I work. We love buffalo chicken over anything, so I’ll cook that in the crock pot and then add it to potatoes or cauliflower pizza. I know you’re excited for all that May is going to bring!

  4. I can’t wait for summer too! I work in higher ed and live in somewhat of a college town, and man, is it a nice break when all the “kids” go home for the summer! We also have a new puppy (a dachshund!) and you’re not kidding—it’s so much work! But so worth it. I also had to tell you—your reading-on-the-porch pictures have inspired me, and I ordered a couple of zero gravity chairs on a lightening deal on Amazon yesterday! Can’t wait to sit on our deck and read all summer long! 🙂

I can’t believe how much Eddie Otis has already grown! Are you calling him by both names or just Eddie? I saw your comment about grad school and wanted to put in my two cents. We found that most universities offer some type of assistantship and will pay grad students as well as discount their tuition. Of course, that was over 20 years ago and may have changed since then. Just thought I’d let you know in case it’s still the case. My oldest actually was going to Ball State for guidance counseling and was the tech guy in the teachers’ computer lab. He never did get a guidance counseling job, but he is one of the top IT guys at the University of Indianapolis! So, even though the naysayers are all putting down higher education, it does pay to get those degrees!

    I remember the last days of school as being bittersweet and full of mixed feelings. My two oldest kids went away to college so we didn’t have those kinds of moments. My youngest was a commuter (and cost the most). He also stayed home for a few years after graduating before finally leaving the nest. We have a special bond because of that, I think. I hope your last days this school year are fun, memorable, and fast!

      Thank you for all of that info – I really want them to start working because I think it drives home what they want to do. I don’t want them to be over-educated.

  6. As always, your meals (both home and out) look amazing. Yes- this time of the year is soo hard. I’m permanently tired. EO is so cute…spring is the best time to get a pup. He gets lots of outside time. Will your boys graduate this year?

    1. Thank you! It is! I’m in the midst of AP Spanish prep and fighting major senioritis! It’s bad this year!
      Yes we are graduating as far as I know! One more payment and they assure me they are on track and have a cap and gown.
