I am linking up today with Sarah and Holly for a bit of weekend talk!
Let’s go back to Thursday…
I had an appointment in the morning so I could spend the day with Mason! We went to the bank to get some pounds:

We ate at a French restaurant for lunch – ooh la la! We split a croque monsieur and it was a great idea! We also got some mushrooms and they were heavenly.

We had such a nice day that also included a couple more stores for a couple more necessities. We did all the laundry and made piles of all the clothes and things he was taking.
That night, we made the French meal again – bacon wrapped chicken spread with Boursin cheese, broccoli this time, and au gratin potatoes.
Friday I worked and it was a good day and after I met my friend at Mojito for a pitcher of mojitos and some guac with plantain chips!

I got favorite Mexican take out for Jack and Mason and then I spent some time on the patio…

Mason had told me all the meals he wanted me to make or food he wanted us to get before he left and it was quite daunting! So cute!
Saturday morning was so cold so I broke out an Aldi pumpkin k cup and I approve! Really good!

I was outside to see the beautiful sunrise!

Proof of the cool weather!

I made 8 breakfast burritos using Aldi low card wraps:

Saturday Mason and I had a few more toiletries to get and we also stopped in the Kroger wine shop.
Two thumbs up for this that I tried with dinner:

Jack and Mason spent the afternoon and evening together and Tom had some much needed sports in the big chair time. His weekends have been so busy lately so I knew he needed that. I spent time here reading…

the rest of this:

So cute! Then, I started this…

A student loaned it to me so I didn’t want to keep it too long.
Tom’s friend from the gym brought up some Vermont white cheddar and it made a great little snack…

And, per Mason’s request we had our favorite Mediterranean for dinner. We watched a show as a family, too. Last dinner as a family of four together for awhile…

And, that is it for Part I!
What was the highlight of your weekend?
Amy
We had a much needed date night out this weekend; it was very relaxing and so nice to not have to cook for once.

I love all your 1:1 Mason time. A mix of fun, meals, and productivity. I sat on my front porch quite a bit this weekend and it was nice. I will have to try that wine. I want to pop into ALDIs this week …those k cups seem right up my alley.

Also get their version of Laughing Cow in garlic and herb! So good! I’m learning more about what we like. I have a container of carnitas for thsi week and Jack likes their container of Mac and cheese like Bob Evans.

I placed an order from our library and Reminders of Him was first to arrive. I started reading it and realized I had already read it. Then the German Wife was delivered so I read that this weekend and returned Reminders of Him. The German Wife was sooo good. I believe Tanya had shared it, I am so glad she did. It’s historical fiction but very thought provoking!
I am so jealous of your weather!

I’m loving this weather. And loving the sweet time with Mason before he goes. What an exciting time. We spent time up at the hospital with the kids. Still no babies and that’s a good thing! Happy new week!

I love a croque monsieur sandwich! The Barefoot Contessa has a great recipe for that and I’ve made them for a family lunch. Delicious! It is feeling more like fall and I love it. I hope Mason has a great trip and enjoys his time in England. What a great opportunity!

You had a full weekend! That Mediterranean dinner looks amazing. I have those same pumpkin spice k cups! I’m not sure how I feel about them, though. I love it being so cool in the mornings, it’s the same for us. I keep thinking about Jack and how he took it with Mason leaving yesterday. I really loved my Friday this week…the way it started with outside reading, Todd having dinner for me when I came home from dropping Dad off…it was really good.

All your meals look so yummy but the plantains and guac look incredible- jealous! I read Reminders Of Him and loved it- isn’t it funny how high school kids are reading Colleen Hoover now? I jumped when I saw my daughter reading one of her books- ahhh!

I had to read back in your blog to see why you needed British pounds. How exciting for Mason to be studying in England. I grew up in the northwest of England – on the coast in the beginning and then in Manchester. It’s about a four hour drive from London, about an hour less by train. Loved every minute of being there – would go back in a heartbeat. I have to agree with the comment Tanya left on your post when you first wrote about the study abroad. Get out into the countryside and the villages, the trains run everywhere. I can’t wait to hear more about his adventure.

Oh – I should have re-stated the reason!
He is in Ormskirk – 40 min. north of Manchester. He seems to have already fallen in love with it and i think a smaller town was the right fit for him. Edge Hill University is the college. I need recs on towns, cities he should visit! amywscott0@gmail.com if you have any recs and have the time! Yes, we are more of small town people when we travel. I love that advice!

Yeah, my girl left too and it’s a combination of being happy for her adventure and missing her! She’s not big on telephone calls so I guess there won’t be much contact for a while…
Enjoy your day!
