It’s finally soup weather! Have you made your first batch? I have made one batch of chili and one failed attempt at taco soup – I didn’t like the enchilada sauce that the recipe called for. I will look for another recipe.
Yesterday I made this soup and it was delish and even better, super easy!
One carton chicken broth
Half an onion
Salsa verde – I only used half of the jar
2 cans great northern beans
Green chiles – one small can
Can of corn
Cooked, diced chicken (I used rotisserie)
Cumin
Not pictured – about a half cup of salsa in the jar – not fresh
Cook for about 20 minutes or more. I like to bring to a boil and then simmer for awhile. I also sautéed the onions before adding.
Serve with some Mexican blend shredded cheese and sour cream if desired. We also had corn bread with it.
I guess I call this chicken tortilla soup?

It’s not soup weather here yet but I still love a good soup recipe! I’ll have to give it a try, looks like it could be great for watching football. Anytime I can add tortilla chips and cheese I’m in!

Let me know if you try it! It’s pretty light, too. We are having a crazy cold October and it’s like 30 this am! Lost our power last night due to winds and had a frost advisory. It’s usually 70! Crazy weather. You can eat the soup in your cold AC! Have a relaxing Sunday!

We call it white chicken chili too! Easiest taco soup recipe is ground beef, pack of taco seasoning, pack of ranch dressing powder, can of corn(or two), can of tomatoes, can of Rotel, can of black beans (or any bean you like or a mix of beans), chicken broth(if you want the soup thinner), and that’s it! I always put in extra ranch powder and tomatoes. It is SO good served with tortilla chips, cheese, and sour cream.

Good looking soup recipe. I enjoy making soups during the winter and one favorite is the Tuscan bean and sausage soup. As far as a taco soup, the one mentioned by Misty is one I go to often. I’ve never found a enchilada sauce that I like. I’ve used the little cans of Mexican tomato sauce (Pioneer Woman recommendation) whenever I have a recipe that uses enchilada sauce.

Thanks! Tuscan bean sounds delicious! Great tip on the Mexican sauce. I’m a big fan of Pioneer Woman and her recipes have never let me down! I am going to do that taco soup soon. I need a corn chowder and tomato bisque for my husband. He likes to order those at restaurants.

I love a tomato bisque. We have a restaurant here in Indiana that has the best and I’ve never been able to get that recipe. I’m going to be on a mission to do that now!
