I can’t believe it’s July 1st! But, I had a really good and really full (or as full as I wanted it to be!) June if I look back on it. I have about a month left of summer before I start my professional development and classroom set up. I need to look at my Summer List and do a halfway post on the blog, too. And, of course, I need to get on those goals I haven’t yet accomplished.

I am happy to link up with Sarah and Holly to share my weekend with you all today!

Thursday was a great day and I already talked about it on Friday Favorites, but I like to include it in the weekend..

I went to Myriad Swim Club with my friend Victoria for free. They had a teacher promotion in June and we were lucky to snag a spot. It was so fun and relaxing. We really should have gotten PD credit, right?

I went home and that night we ordered pizza because I had cooked 4 nights in a row. I like to save my take out for when I need it and not a specific day of the week. Our favorite good (read expensive)pizza right now is Parlour and we Door Dash it. Look at me using my wedding china again.

Friday morning was simply beautiful and I took a picture to remember how happy summer mornings make me. This was a non-humid breezy morning and Eddie Otis was chill and let me do my blog reading! He is getting more independent in the yard which is great! But, don’t worry, the humidity came back in full force Saturday and Sunday mornings! I opened the door Saturday morning at 4:30 am and it hit me like you wouldn’t believe.

Friday morning I roasted one side of this sheet pan with sweet potatoes and red onions and just basic spices and the other side with taco seasoning for that night’s dinner.

I went into Kroger for a big (pretty big) shopping trip for the first time in about a month. In June, I used Kroger pick up once and Walmart Plus delivery the other times. They’ve moved things around and added higher shelves that I can’t reach and yeah, I’m not missing out by not shopping in person. I did see two students so that was nice!

It took forever to unload and put things away and then I was out of steam.

Eddie Otis and I went outside again and I think he winked at me?

Since we had ordered pizza the night before, I made burrito bowls for dinner.

And, I tried the mint chocolate chip Yasso bar and it’s delightful, too!

I haven’t tried cookies and cream yet.

Saturday morning I had the puppy out of the house (Tom takes him to swim in the river most weekend mornings) and I cleaned and mopped. I guess I took this photo yesterday morning and it didn’t look as good anymore!

Then, we went to Costco on our way to our friends’ pool for a Class of 1990 pool party. There were four couples who were able to attend that all live in this area now from my high school class. This is the pool of my friend Beth from Host It Notes!

And, these are the only photos I took because it was so hot and I was in the pool the whole time!

We had catered bow tie pasta and sandwiches and I brought a lemon feta arugula orzo salad.

We were the first to arrive and the first to leave. You have to keep them wanting more! But, we were there for almost 5 hours and I was so tired on the way home and when we got home. We watched the first episode of Season 3 of The Bear with our kids while we had a dinner of leftovers and random things. The episode was weird and I didn’t love it. Also, I have started Our Lady Jane on Prime and Tom is getting caught up to me to see if he likes it. And, my kids are watching How I Met Your Mother while I sleep. They usually ask me if I want to watch it way too late and then I fall asleep!

Sunday morning I got to sleep in! It was really nice and I needed it! What does sleeping in look like? I think I made it to 6:45?

Then, Eddie Otis and I sweated on the patio through the humidity!

We went inside and I guess he put himself in timeout. He loves the cool tile but this time it looked like he was staring into the corner.

I am so proud of myself for cutting down on food waste! I cut up salad fixings and put them in Tom’s snackle box.

I always have to remind myself that my energy happens in the morning and I need to to do stuff like this when I have that energy.

Tom and I asked a few people to go out on the boat but they all rejected our offer so it was just us – and Eddie Otis!

We had a nice few hours relaxing in the cove.

We got home around 3:00 and I showered and read my book. I’m really enjoying it! Boy, my summer reading requests better start coming in at the library or I may be forced to purchase some!

We watched The Bear Season 3 episode 2 with our kids and we ate dinner together. And, that’s a wrap on our weekend!

Ok, July…you need to go much slower, ok?

  1. I was so disappointed in season 3 of The Bear! So many of the episodes were like montages with the music and just felt kind of weird and long and like they had little point to them. That pool party sounds like so much fun!

  2. We have to catch up on The Bear – I can’t even remember where we left off. My library hasn’t delivered anything to me in awhile from my request list, I may need to go check out what they have in person.

    And sleeping in…ugh, I am the same. If I make it to 6:30 I am super impressed with myself. When did I turn into this kind of grown up??

    Finally, that characuterie your friend made – HOLY COW!!!! WOW!

    1. You know – we should have gone back and reviewed the last episode of season 2. Yeah, sometimes I get lucky with the new release shelf when I go in. I agree. I wish I could sleep a bit later but I have to go to the bathroom. I sometimes can fall back asleep.
      I know – she is talented!

  3. I am a high energy person early in the day and don’t ask me to do anything strenuous, physically or mentally, after 3 pm. We had crazy humidity all weekend long and that’s exhausting. I definitely think rest should count as pd for all teachers in the summer months. What do they need more than that?? Our pup had surgery last week so can’t swim for another week. He’s not happy about it. Have a great 4th!

    1. Yes! You can relate. The humidity is gone and today is gorgeous! I agree! We have to recharge our batteries. Oh – I’m sorry. I hope the week goes quickly for the pup and for you all!

  4. Last Thursday and Friday mornings were nice here & I hope we have a few more at some point during this humid summer! It does look like a nice weekend for you. I watched the first 3 episodes of The Bear over the weekend and am wondering how the rest of the season will go. The acting is incredible, but I was wondeirng if it was just me trying to figure out a deeper meaning? I was a little distracted at times watching, so maybe I missed something. That sheet tray of food looks good, but my brain was thinking of the time to cut up those sweet potatoes. Sometimes they are so tough to cut when raw. I bet it was delicious though.

    1. Today the high is 81 and it feels so nice! No humidity finally! I know – this season is hard to figure so far. It’s very artsy. You know – I peeled the potatoes and cut the chunks and it didn’t take that long. I have a really nice peeler and knives by Cutco that were wedding presents. They are awesome! It was totally worth it. I have microwaved to soften before but didn’t even think about it this time.

  5. What a beautiful summer weekend! That pool club looks so fun and YES you should’ve gotten PD credit- ha! I mostly have the most energy in the mornings too- I can so relate- enjoy your summer- you deserve it 🙂

  7. What a great weekend. I bet EO is completely worn out after swimming. I’m happy if the dogs let me sleep in til 6. I know it will get better and better with time. How do you like the Jane show? I’m intrigued by it.

    1. He swam so much this time. Just his little body climbing up on his dock had to have worn him out. He did it like 20 times! Me too – that’s all I ask is 6:00. I like it! It’s fun! The only issue I have is with the fantasy element. I don’t love that. The Ethians is what I mean.

  8. You really know how to pack lots into a weekend! I don’t like shopping in our Kroger store (or any grocery store), either. They constantly move stuff. And, I can never reach the higher shelves, either!

    Love the photos of Eddie Otis…putting himself in time out! Poor Jack doesn’t have any nice cool tiles to lie on, but he will curl up under the telephone stand on the LVP.

  9. I need to try those yasso bars. The pool party looks so fun…nice that you all could get together. The charcuterie board looks amazing! I just saw a video about putting sandwich fixings in the snackle box for easy summer sandwiches (& buying Jimmy John’s bread) seems like a great idea.
    July needs to hold its horses! I’ve accomplished nothing 😂(but had a really great June, obviously)

    1. I couldn’t find sea salt caramel – that’s the one I want to try next. I went to Jimmy John’s for day old bread and they said they didn’t have any! I love that idea!
      I know- I’m getting a bit scared! Yes, you did! Now you can stay home and do all the home summer things!

      1. Well, I’m back to kc this week to help my dad after his knee surgery. I did bring a few school things and loaded books on my kindle. A little productivity and a little leisure although he’s needed quite a bit of help so far.

      2. He’s been having problems even before my first kc visit but had to wait on MRI. Then, when he could have surgery it was either the Thursday before my vacay or July 2. So we waited so I could come help. I saw my mom and gma yesterday which was nice and will again before I leave on Sunday . My dad needed more help than I anticipated early on. He’s doing better and getting more independent

      3. Aww, that’s too bad. I’m so glad you could help and even though it wasn’t under good circumstances, I bet that one on one with your Dad was nice. That is so rare now. Oh, that’s good, too! You have such a nice family. I know it’s got to be hard being so far away. I hope you flew this time, but my friend is from KC and told me that direct flights are hard? Maybe I made that up?

      4. The 1:1 time with my parents was really nice. I honestly didn’t want to leave. I don’t think direct flights exist anymore 😂 I did fly out of Lexington so that was nice but I had a nightmare day getting home Sunday and ended up in Louisville at 10:30pm
