Happy Friday! I am linking up with Andrea and Erika for some Friday Favorites! One of my sisters starts her spring break today – what about you? The other sister and I still have one more week to go.

I ordered myself some new eye patches and it reminded me they are really good for allergy/sinus pressure and pain for you or your family. You’re welcome for this photo!

So, Erica and I have had an Irish week at school and I have had an Irish week at home. We each brought in our version of corned beef for lunch one day:

The night after the beef, I made cottage pie. I used to call it shepherd’s pie but after learning that had lamb and cottage has beef, I corrected my language. I didn’t realize I was out of shredded cheddar so I cut little squares of Velveeta. Lol. It looks funny but it tasted great!

I am ready for foods other than Irish foods now!

We had a meeting after school where we were supposed to write ourselves a motivational letter for after Spring Break. Do you get into activities like this as an adult?

I will let you decide how I feel about these activities:

I was rewarded with a gorgeous sky one day upon arrival.

I am loving my $10 soy candle from the farm store last weekend. I love a little jar candle and the price was great for the size and the scent. I haven’t been to Bath and Body in forever.

I have only tried the avocado lime in the packets from CFA, but I had the apple cider with a spring mix salad this week and yum! I didn’t know my store carried these.

Ok – the best set I have done so far. March 9-March 20.

It was really cold at the start of the week, but on Wednesday I realized that I really AM a better person when I have some time in the sun.

This is a really good prosecco from Costco if you are a member or know a member.

  1. It’s spring break week here this week. The schools in our area always have that either the week before this one, or this week. I think because of Easter break (Good Friday, the weekend, then a professional development day for teachers the following Monday) and testing, they have to spring break at this time. It always seemed too early for me, I’d have preferred sometime in April to make the time between that and the end of the year shorter. I know you’re looking forward to your spring and summer breaks! I didn’t realize the differences in Shepherd’s and Cottage pies, that’s good to know! We have a Scottish pub here that I’m dying to try; it’s called Highland Pub. It’s on our town square, so I never think of going that way for dinner, you know? I’ve missed spending time outside the last two Mondays because of the weather. I’m hoping it’ll be sunny again this week so I can do that again! I hope your day goes quickly and that you soak up all the great things about your weekend!

    1. Oh you have to go to that place! I don’t especially find that to be my fave type of food but it would be fun. Our spring break just seems late due to less snow days this year!

  2. Our spring break is in mid-April… so we have a few weeks left to go. For the first time in 20+ years my corned beef did not turn out well at all; it was so tough and chewy that no one ended up eating it! I didn’t really care since I had zero intention of eating it anyway but felt bad that the guys didn’t get to enjoy their food. They had really been looking forward to it. I can only assume it’s because the piece we got was so large that I could not submerge it for simmering and kept turning it over every hour or so.

We had a pretty day here this week and it was so nice to be outside. Even if I am working inside, it is still so nice to see the sunshine outside! I have had that Prosecco before from Cotsco and it is good. I love that y’all wrote yourself a note for after Spring Break. That seems genius as everyone always needs a boost after coming back from a week off work. Enjoy the weekend!

    1. Wonderful! Yes, I am the same – just seeing out the windows is mood-lifting. I love prosecco. No, the letter felt fake to us. And, it felt infantile. How about they need to write us a letter of thank you? Ha!

  4. So sorry your spring break is so late!! My youngest daughter who goes to school in Oklahoma is on spring break right now which is pretty late for most colleges. I guess the only benefit of that is some places may not be as crowded with spring breakers especially traveling. My girls love that Avocado Ranch CFA dressing. They put it on everything!

  5. We have another week until our spring break, we are so looking forward to it.
    I hope the eye patches help.
    That corned beef lunch looks so good and I call both the lamb and beef dish Shepherds pie, they both taste just about the same.
    I love the sound of the Avocado Lime Ranch and your nails are so pretty, I love the colour!

  6. I will look for the Chick Fil A dressings…they look good. I agree about Polka Dotty Place. She has such practical suggestions! Hope you have a good weekend with lots of outside time.

    1. I also just had the idea to top a burrito bowl with the avocado lime one to save me time making my own! She really does! I hope you do, too. It’s back in the 50s for us, sadly.

Nope, nope, nope!!! I hated those motivational things almost as much as I hated ice breakers at the beginning of the year when there was nobody new in the building! And, a meeting for a meetings’ sake. I am not good with doing something just to be doing something. My letter to myself would have been filled with a few expletives and drawings! 

    Would you believe I have over 100 Bath and Body Works candles? I honestly was shocked when we moved because I would just pick them up whenever they went on major sale! So, when it came to packing those little beauties up, I was shocked! I’ve even given my kids full trays of them and have enough, probably, to last until I croak! Now, if they bring back Black Pepper Bergamot, the deal is off! I love that one. There was another one they had one year that had Paris in the name I think. It had a really strong just brewed coffee flavor as the top note. I still have it and only burn it occasionally! The other candle I have that I just open and take a whiff of is by Gold Canyon Candles which went out of business. It’s called Christmas Presence, and it is the epitome of Christmas for me and my daughter. She thinks she’s found a dupe for it, but I haven’t ordered one yet.

    1. Yup – my thoughts exactly. I am a professional with two Masters degress. Do you think they make other people with 8 years of college in other professions do this?
      No – 100? I love Mahogany Teakwood and anything with Bergamot and “masculine” smells. I also like citrus. I am super picky about my candles so I don’t recommend that people pick them out for me usually! I am trying to buy one thing, use it up in many areas of my life right now. Candles are one of them. I have more than one, of course, but I am trying to use what I have. like supporting local business so there are some local candle people I like – one makes cocktail inspired candles. Why are candles so expensive,though? Like $25 for a big one.

  8. One more week for me too… Easter at the cabin, and then Mallorca again! It will be amazing to soak up some sun after this long winter!

    I really like the eye patches but haven’t been using them for a while – thanks for reminding me! Monday morning they are on my face!

    Oh, those spring moment in the sun! It will happen here too soon, I hope, but spring is cold so far…

      1. Si, muy pronto! I really find it bothering that I don’t speak Spanish! I can do French with hesitiation, even some Italian… but Spanish, no. How was English in Scotland? Did they understand you!?

  9. I had a chuckle at the motivational letter you wrote to yourself. I think you are far from a bruja! LOL and no I do not like those kinds of activities, bleh! I hope you have a wonderful spring break, we have two more weeks and then we have our autumn break. Most years Easter falls in the middle of the break but it doesn’t this year. So that means two four-day weeks and then it’s the school holidays. I can’t wait!!
