I had both of these posts as separate beings, but then decided to combine them. 

I sometimes grocery shop at Target and am often amazed at the great prices as compared to Kroger. Also, they have items that Kroger doesn’t carry. 

On one of my E learning days last week, I needed to get out and had a specific purpose in mind to get a few things that are “Weight Watchers friendly”. Now, to be clear, I want to eat mostly real foods, but there are some things that I think can help me. 

I am trying the blacked chicken strips again. I didn’t like them before, but I plan to air fry/convection oven them and see if I like them better. 0 points

Velveeta slices (Tom’s favorite) are no longer sold in my Kroger. This is only the 100th item or so that we bought that they stopped carrying. 1 point

A lemon flavored tuna packet to top salads, a salmon tuna pack, a taco seasoning pack for my fat free refried bean, salsa mixture that can be a dip or put on a burrito. 0 points for all of them

Thin corn tortillas to make my own tortilla chips. 1 point each tortilla

Turkey for sub in a tub. 0 points

Banana peppers for sub in a tub. 0 points

Lettuce for sub in a tub. 0 points

Salsa for Tostitos queso mixture and bean dip. 0 points

Devil’s Food cake mix and Angel food cake mix for mug cake. You mix these two mixes together in a big baggie, spray a mug with Pam and put 3 tablespoons of the cake mixture in your mug with 2 tablespoon of water. Microwave a minute or a bit less. 3 points

Tostitos bite size for the salsa and queso mixture. 24 chips for 4 points – probably the best bang for your buck with chips, but I ended up giving those to my kids and enjoying the taste of my homemade chips more and you get a lot more!

This is the mixture I’m talking about. Do heat it up – so much better! Experiment with heating things and leaving things cold and cut things in smaller pieces are a couple of tips I have. 

“Sub in a Tub” - make a mixture of olive oil, red wine vinegar, and italian seasoning and pour over whatever you would have on your sub. This is a great summer lunch, but I was craving it!

My buffalo chicken dip with homemade chips: 

My egg casserole has been my breakfast lately, along wtih 3 Amylu chicken breakfast sausages: 

6 eggs or sub in some egg whites, a can of green chiles, a half cup to one full cup of fat free cottage cheese, spices of your liking – I do cajun, garlic powder, pepper. Bake at 350 for 35-40 minutes. 

I love La Banderita low carb flour tortillas and buy the street taco and the burrito size. You can put anything in one. This dinner had chicken, lettuce, mustard, and pickles. I had a side of green beans and a twice baked potato where I used some bacon bits, shredded cheese, and laughing cow cheese! Look at my tiny potato! 

My carrots look weird and I should have grated them. This is a new salad to me and Tom and I both loved it. 

Just Google Weight Watchers cabbage soup and you will see this. I personally love cabbage.

  1. All the food looks so delicious! WW sounds like a simpler way rather than calorie counting. I love cabbage too! The other day I was craving cabbage rolls but I didn’t have the patience to stuff cabbages. Instead, I just made a cheat version and threw together the mince, cabbage and rice into the tomato-based sauce. Turned out good. Not as great as proper cabbage rolls, but it satisfied the craving.

  2. I like cabbage soup too but haven’t made it in awhile. Our Target only has pantry items but not much for real actual groceries… I still enjoy looking around though!

    1. It really hit the spot when I made it during our stuck at home E learning days! Our Target isn’t a full size grocery one but they do have several items of groceries and I always see new and different things there!

    1. I should have shown a picture. It’s a very dinky cake! Ha! But, it fills the need for a bit of chocolate flavor. I hate that I have to talk about grocery stores so much!

  3. So many great ideas. I love that you make your own tortilla chips. Whenever I go to target, I usually pick up a few food things that catch my eye…which is how I ended up loving the Kind ice cream bars 😆

    1. Thank you! Right – Target has different and interesting things so it’s good to check every now and then. Tom would probably love those – I don’t like nuts and I think they all had nuts.

  4. I used to love cabbage soup, but I haven’t thought about it in a long time. I had to shop at Target for a while after my Kroger closed because of a shooting that happened there, and I was surprised at their grocery items. Their prices were often better than my Kroger, too! I never go to Target, though…I always forget to go in and check. I think I’m going to make your breakfast casserole…it looks so good and could be something we do for dinner.

  5. These are all great food ideas! Just started back to Weight Watchers and really appreciate your sharing what works for you. I already tried your Buffalo Chicken dip anf Chicken slaw salad….Yum! Im going to try the egg casserole now. Is it cooked in a 9×13 pan. Keep the ideas coming!

  6. Lots of yummy food, Amy! You’re making me want an air fryer now. My daughter has one, but I’m not sure how often she uses it. When I was on WW years ago and actually succeeded at it, we bought pita chips at…you guessed it…Kroger! And, of course, they no longer carry those or the pita pockets I loved. I wouldn’t mind when they stopped carrying something if they’d replace it with something similar. But, they rarely do.

    I only shop the grocery part of Target these days. The one down the road from us is always rearranging which drives me nuts! I want things to stay where I know they are.

    1. Your oven probably has a convection setting and it works the same – so try that!
      Hate when they stop carrying my stuff! Ugh!
      Same – I think the first Target grocery I ever saw was in Indiana – maybe Avon – when I was visiting my sister.

  7. I’ll tell you how fresh out of ideas I am: I literally ordered a meal delivery kit last night LOL.
    I don’t mind the cooking and the prep (I don’t want takout or anything). It’s the ideas that I’m just completely out of.

    1. I have been tempted to try Factor, so I get it. I go in spurts where I am super inspired and then I hit a wall. I am going to try to do errands one afernoon a week like on a Wednesday and then pick up something healthier if I want to. I just am over trying to cram all errands into my weekends, and I don’t like getting to Friday and only going to work and home, work and home, work and home. I can’t believe how much it costs just to pick up Chick Fil A, though! So, a meal kit is not a bad idea. I found that I couldn’t stick to their plan and follow their directions. I was too rebellious.
