Do you have anything weird that you eat when you are just cooking for yourself? My mom used to make macaroni noodles with tomato sauce, and I still sometimes make it. It’s really good!

All you do is boil your macaroni and then pour your tomato sauce over it. You might need to microwave it a bit but sometimes the noodles are hot enough.

Now, to make it a little less caloric, I use these noodles:

6 packets that look like this come in the box. I got mine at Costco.

It’s faster, too. You just drain and rinse them in a strainer.

  1. My mom would make something similar (and I still do from time to time). It was shell macaroni and diced tomatoes. After macaroni cooked and drained, add tomatoes and a can of water. Heat and eat.

  2. That sounds like a quick and easy meal for sure. When I am alone, I love to splurge and do sushi or gourmet pizza takeout with a glass of wine. If I am cooking for myself, then I will take the time to make a special meal like a fun salad or funky risotto

  3. Can you believe no one in my family likes eggplant Parmesan so I’ve been known to make a whole pan just for me. This looks good!

  4. peanut butter and jelly or I make a mini pizza on an english muffin. In the 80s I made this as a snack after school. We called them pizza things.

  5. I used to love pasta with butter and parmesan cheese, but it’s not the same if I don’t eat it with real pasta. I did recently find some gluten free pasta that I like, so every couple of weeks I will have that for dinner if Todd is working. I try to keep from eating pasta as much as possible, though. Usually, I’ll just eat leftovers from the week. I use those nights to splurge sometimes, though…and if I want a “real” dessert during the week, I’ll use one of the nights Todd won’t be here. I don’t want to tempt him! He loves sweets, so I try to keep them away.

    1. Yum! I have pretty much switched to those noodles I showed or to whole grain pasta. It is quite filling. I am also measuring portions better than before. You are sweet to think of him and make those tweaks to your meals.

  6. That seems so simple but cozy.
    I love avocado toast and egg so much that sometimes that’s my dinner when no one else is home. I also love a snack plate – meat, cheese, fruit, etc
    Sometimes, I have either of those things for lunch too.

  7. I have a very vivid memory of you all having this for lunch on one of our Florida vacations. While we were all still in our swimsuits with floatie rings around our waists.

  8. If I have some good salad stuff I’ll make one and have it with leftovers or I’ll order pad Thai for carry out since my husband is not a fan!

    1. I am trying to get better at home salads. Why do restaurants make them better? We got pad thai the other night when Mason was gone bc he doesn’t like it that much anymore.
